Potatoes Anyone?

We harvested the potatoes in our vegetable
garden on Thursday just in time for today is
a rainy day.
There was quite an abundance of potatoes
this year and Brody is looking at the excess
that I brought upstairs to dry out.

Could use some advice on how to store them
for the winter!

Would love some new potato recipes...do you have
any favorites?

i just made potato leek soup with a new (to me) recipe i found in the kripalu cookbook. VERY good.

I was going to say the very same thing as Karen! I also love to use potatoes (and any veggies i have on hand) in a frittata.

I think my favorite recipe is potato, cheese and bacon soup. I also add them to homemade chicken soup instead of noodles.

I'm not much of a cook - potatoes in my house are either baked, boiled or mashed!!

I think it's generally recommended to keep potatoes cool, dry, and dark, with good air circulation if possible...in the olden days, they were kept in trays, wood crates, or burlap sacks in unheated basements. You have to go through your stored 'taters periodically and remove any that are getting limp, squishy, sprouted, harboring slugs, etc.

That's a lovely looking harvest!

I appreciate all for your comments and you've given me some good ideas! The potatoes are all sitting in brown bags at the moment and we still have to find a cool dry darkish place to keep them. Thanks again!
